		<description><![CDATA[Welcome to the world of artisanal matcha, Dina and Tipping Man! Dina, have you offered the hubby a taste yet, or maybe he&#039;s just against it in principle!? Need to win his good faith -- tell me his favorite dish and we will invent a breakaway version of it. 

This is what I think about pairing food with Breakaway Matcha: strongly flavored foods will have an adverse effect because the complexity going on in the mouth from eating screws up your ability to notice the amino acids that give the tea so much umami. 

If one is determined to pair strongly flavored food with matcha, it would be best to experiment with a cheaper one, one that is at least several grades below Blend 94, ie culinary matcha, which is mostly what is on the market anyway. The reason: culinary matcha doesn&#039;t have much umami anyway, and has little to no natural sweetness, so you wouldn&#039;t miss any of its (nonexistent) subtleties. 

Needless to say, I&#039;m not a big fan of pairing great matcha with anything; the food will mask what&#039;s special about it. One exception:a small piece of good chocolate. Great matcha seems to LOVE chocolate!]]></description>

We just started using a ceramic lined saute pan, and can tell you it is fabulous-I need to cook with high heat, and love the way this pan heats quickly, and gives the nice seared crust  on meats and fish and cleans beautifully with a sponge. The brand is Bialetti (made in Italy).
Supposedly healthier than teflon.]]></description>
