Hi Sandra, It is incredibly delicious – and healthy! I probably wouldn’t line the inside of the pot with foil – I’d worry about the eggplant sticking or chemicals leaching into the food from the foil (though maybe that’s an unfounded concern). The clean-up isn’t too bad – and is worth it! Enjoy!
